The mogette bean was introduced to Vendée in the 16th century. It is a dry and semi-dry white bean, mainly cultivated in Southern Vendée. It gets its name from the term "mogette", which refers to this specific bean and has long been a major element of local agriculture.
In this preparation, Maison Argaud cooks the mogette beans in a broth made of onions, tomatoes, carrots, duck fat, and a beef and poultry broth. One of the secrets of the recipe lies in the cooking method of the beans so that they are tender without turning into a purée.
